Using this site

Kitchen Sums provides free calculators for educational and informational use. No account or sign-up is required, and there is no charge to use any page on this site.

Not medical advice

The calculations on this site use standard kitchen conventions (baker's percentages, salt as a percentage of water or meat weight, coffee-to-water ratios by weight, the USDA turkey roasting and thawing tables), not original research or a substitute for a thermometer. They are conventions: flours absorb water differently, salts vary by brand, and ovens run hot or cold. Use the numbers as a starting point, and cook meat and poultry to a safe internal temperature regardless of any time shown here.
